No mail is lost. We run dual delivery so both the old and new systems receive messages during the transition, and historical mail is copied rather than moved — your source system stays intact until you're happy to decommission it.
Yes. Your domain and every address on it stays exactly the same — we simply repoint the MX records once mailboxes are populated. Aliases, catch-alls and shared mailboxes are recreated in Workspace, and Exchange distribution lists become Google Groups with the same membership.
